Warm, nutritious comfort in a bowl. This delicious soup is traditionally eaten during the month of Ramadan to break the day's fast. It is jam packed with all the yummy nutrients you've been missing! Bon appetit!

Simple ingredients combine together to bring you warmth in a bowl!

Here's what you'll need

  • Lamb stew meat

  • Lentils

  • Onion

  • Fresh parsley

  • Chickpeas

  • Beef or chicken stock (veggie stock works too for a bit of a lighter flavor)

  • Cinnamon, turmeric, ginger

  • Tomatoes

  • Tomato Paste

  • Flour

  • Vermicelli pasta

  • Lemon for garnish

Start by browning your meat in a large stockpot with oil. Then add your grated onion, parsley, stock cube, spices and water, mixing gently.

One everything is in the pot, bring to a boil and then turn down to simmer, covered partially, for around 1 hour.

While you are waiting, peel and seed the tomatoes and puree in a blender with water until smooth.

Also mix your flour and water to make a paste, adding in tomato paste, making even throughout.

Once your soup is finished simmering, turn up the heat to medium high and add in the tomato puree and tomato paste/flour mix. Bring to a boil, making sure to stir constantly to break up the paste, avoiding clumps from forming. Once your soup is boiling, add in your vermicelli and let cook for 5-7 minutes, or until your pasta is cooked.

Serve warm with lemon and fresh parsley.

Enjoy some fresh dates alongside your soup for a perfect combo of sweet and salty!
